UM has an interesting cluster of programs whereby you can earn a 'certificate' to demonstrate the effort you've put into a particular area. For example, there's one for Cellular Biotechnology, and also Science, Technology and Public Policy, but now there's a Graduate Teacher Certificate.
Not something that'll show up on a transcript (ummm, whoopie?), but is very applicable to a CV. Given my avowed interest and increasing skill at teaching, I've started the ball rolling on that last one (though if I'd known about the STPP last fall, I would've jumped on it). I've also fired off a few e-mails to department faculty who are teaching undergrad courses next term. The cert program requires a second full-term GSI stint (my prior experience here is overseeing a pair of half-term courses), as well as some mentor-mentee work.
Whether the certificate actually means anything in the long run, I don't know, but I figured it'd at least be a nice, little, shiny thing on the resume.
